Description
A delightful recipe for scrambled eggs combined with grated potato and fresh chives, perfect for a hearty breakfast.
Ingredients
Scale
- 4 large eggs
- 1 medium potato, peeled and grated (Russet or Yukon Gold)
- 2 tablespoons fresh chives, finely chopped
- 2 teaspoons butter
- Salt and pepper to taste
- Optional toppings: cheese or sour cream
Instructions
- Wash and peel the potato, then grate it finely and set it aside.
- Chop the chives into small pieces.
- In a bowl, crack the eggs and add a pinch of salt and pepper. Whisk until bright yellow and frothy.
- In a non-stick skillet, melt the butter over medium heat. Add the grated potatoes and cook for about 3-4 minutes, stirring occasionally, until tender and slightly crispy.
- Pour the whisked eggs over the cooked potatoes in the skillet. Reduce heat to medium-low and gently stir with a spatula, mixing the eggs and potatoes.
- When the eggs begin to set but are still a little runny, add the chives and stir gently to combine. Cook for an additional minute until the eggs are soft and fluffy.
- Remove from heat and serve immediately, adding any desired toppings like cheese or sour cream.
Notes
- Adjust the amount of chives according to your taste preference.
- For a creamier texture, consider adding a splash of milk to the eggs before whisking.
