- 500 gr mascarpone (1.1 pound)
- 100 gr heavy cream (3.53 ounce)
- 130 gr sugar (4.59 ounce)
- 300 gr savoiardi (10.58 ounce)
- 250 gr coffee (8.82 ounce)
- unsweetened cocoa powder
- 250 gr cream cheese (8.82 ounce)
- 10 gr gelatin (0.35 ounce)
- 100 gr butter (3.53 ounce)
- 6 eggs
Instructions
- Crush 190 gr of savoiardi in a plastic food bag using a rolling pin and transfer to a bowl.
- Melt 100 gr of butter in a saucepan.
- Add the melted butter and 50 gr of coffee to the savoiardi crumbs and mix well.
- Press the mixture into the bottom of a 20 cm springform pan and chill in the fridge for 40 minutes.
- Separate the egg yolks from the egg whites.
- Soak the gelatin in water for at least 10 minutes until soft.
- In a mixing bowl, whisk the egg yolks and gradually add half of the sugar, mixing until the yolks change color.
- Add the mascarpone cheese gradually while beating until smooth.
- Repeat the process with the cream cheese.
- Warm the heavy cream in a saucepan and add the drained gelatin, mixing until melted.
- Gradually add the heavy cream mixture to the batter, beating until creamy and smooth.
Notes
- For best results, use fresh eggs or pasteurize them if unsure of their quality.
- Chill the cheesecake for several hours or overnight for better texture.
- Dust with unsweetened cocoa powder before serving for added flavor.
