- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinnamon

- 1/2 tsp salt
- 1 cup cream cheese (for frosting)
- 1 cup powdered sugar (for frosting)
- 1 tsp vanilla extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until creamy. Add the pumpkin puree and eggs, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix!
- Using a cookie scoop or two tablespoons, drop rounded mounds of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10 to 12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
- While the cookies cool, beat together the cream cheese, powdered sugar, and vanilla extract in a bowl until smooth.
- Once the cookies are completely cooled, spread a generous amount of frosting on top of each cookie. Enjoy!
