Ingredients

- 2 cups heavy cream
- 1 cup brewed coffee (cooled)
- 1/2 cup granulated sugar
- 2 1/2 teaspoons unflavored gelatin powder
- 1 teaspoon vanilla extract
- 1 pinch salt
Instructions
- In a small bowl, sprinkle the gelatin over 1/4 cup of cold water and let it sit for about 5 minutes until it’s fully bloomed.
- In a saucepan over medium heat, combine heavy cream, sugar, and a pinch of salt. Stir until the mixture is warm and the sugar has dissolved—don’t let it boil!
- Once your creamy mixture is heated, remove it from the heat and stir in the brewed coffee, bloomed gelatin, and vanilla extract. Mix well until everything is combined and the gelatin is completely dissolved.
- Carefully pour the mixture into individual ramekins or molds, filling them about 3/4 full.
- Refrigerate for at least 4 hours or until fully set.
- To serve, gently run a knife around the edges and invert onto a plate, or enjoy right from the ramekins. Add whipped cream or your favorite toppings if desired.
