Clothespin Cookies are unique sandwich cookies made with a buttery dough and a sweet filling, perfect for any occasion.

- 1 cup butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour, sifted
- 1 teaspoon baking powder
- a pinch of salt
- 1 cup confectioner’s sugar
- 1–2 tablespoons milk
- optional: vanilla or chocolate extract
Instructions
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add in the eggs and vanilla, mixing until fully combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
- Preheat your oven to 350°F (175°C).
- Roll the dough into small logs, about the length of a clothespin, and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until edges start to turn lightly golden.
- Remove from the oven and let them cool completely on a wire rack.
- While cookies cool, mix the confectioner’s sugar with enough milk to reach desired consistency for filling.
- Add vanilla or chocolate extract for extra flavor if desired.
- Once cookies are completely cooled, turn half of them upside down and spread a generous amount of filling on the flat side.
- Top with the other half of the cookie to create a sandwich.
