- 1/2 cup vegetable oil
- 2 large eggs

- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup powdered sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil. Whisk until smooth and well blended.
- Add the eggs one at a time, stirring in the vanilla extract until creamy.
- In another bowl, sift together the flour, cocoa powder, baking powder, salt, and baking soda.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Cover the bowl with plastic wrap and let the dough chill in the refrigerator for about 30 minutes.
- Scoop out tablespoon-sized portions and roll them into balls, then coat each ball in powdered sugar.
- Place the dough balls on the prepared baking sheet, leaving about 2 inches of space between each one.
- Bake in the preheated oven for 10 to 12 minutes, until the edges are set but the centers look a little soft.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a fudgier texture, remove the cookies from the oven closer to the 10-minute mark.
- These cookies pair well with milk or your favorite hot beverage.
