Description

Authentic German Cheese Spätzle from Scratch with Bacon and crispy Onions is a delicious and hearty dish that combines homemade spätzle, rich cheese, crispy bacon, and fried onions for a comforting meal.


Ingredients

  • 1/4 cup (50 ml) Water (might have to add more)
  • 2 Cup (250g) Flour
  • 3 Eggs
  • 1 tsp (5g) Salt
  • 12 Cups Vegetable Oil (for frying onions)
  • 1/2 Onion (for frying)
  • 1214 Oz (340400 g) Strong flavored Cheese (like Gruyere or Strong Cheddar)
  • 4 Slices of Bacon
  • 1/2 Onion (diced)
  • 1/41/2 Cup Heavy Cream

Instructions

  1. Mix all dry ingredients together.
  2. Add liquid ingredients and knead the dough for around 10-12 minutes with a wooden spoon until smooth and bubbly.
  3. Let the dough rest in a bowl covered with plastic wrap for at least 30 minutes.
  4. Boil a large pot of salted water.
  5. Use your spätzle tool to form the spätzle and boil for 3-5 minutes, then drain and set aside.
  6. Cut the onion into small slices and boil in salted water for 5 minutes, then drain and dry.
  7. Fry the onions in vegetable oil for 5 minutes or until lightly brown, then place on paper towels to drain excess fat.
  8. Cut the bacon into small strips and roast in a cast iron pan, then add the diced onion and sauté until soft.
  9. Add butter and the spätzle to the pan, sauté until excess water is gone.
  10. Slowly add cheese in batches, then add heavy cream once the first batch is melted.
  11. Stir frequently until everything is melted and combined, seasoning as desired.
  12. Broil for 5 minutes until golden brown and top with crispy onions.
  13. Enjoy your homemade Spätzle!

  • Use a mandolin for even onion slices.
